Whew…I’m almost caught up from being gone for a while there for my wedding and honeymoon. It’s amazing to see how much things have changed even in the couple of weeks we were gone – it looks like the indoor playground has been installed at Chick-Fil-A, and most of their exterior work looks finished, except for installing the lights around the parking lot, which it looks like they’ve been trying to do for a while but the weather hasn’t been cooperating.

The Chase looks almost finished; Starbucks does, as well. I noticed this morning that they just started pouring the foundation for the Walgreens, which will be near Sonic in Shafer Plaza.

Pollo Ranchero, a Mexican restaurant, has a coming soon sign up in a window in one of the new buildings of Shafer Plaza, next to the nail salon that has opened up in Shafer Plaza, facing Highway 80, one building closer to Highway 80 from the building Cold Stone is in. It looks like they’ve just started work on their restaurant, however, so it could be a while before it’s open.

Hong Kong Express, which is coming to Shafer Plaza in the space next to Cold Stone, seems to have made a bit of progress, which is good because it seemed like they weren’t making any progress towards opening for quite a while there.

There’ s quite a few more updates, but I wanted to go ahead and post this information because I know quite a few people are anxious for both the Starbucks and the Chick-Fil-A. Still no word from either business about when their grand opening will be, but as soon as I know anything, I’ll post it. If you hear anything, please let us know!
